Kariki: the blue cheese from Tenos!!

The blue cheese from Tenos!! Produced from non-pasteurized cows milk this mould-ripened cheese has a pungent salty, piquant flavour and buttery aftertaste. Crumbly in texture with a natural, crusty rind which gives it a rustic appearance and develops as the cheese matures while in the (non-edible) squash. It is believed that the squash provides the yeast to ferment the milk into cheese. Each batch of kariki cheese has its own unique “character”!!
